This Pizza Soup is a one pot meal that gets you the pizza cravings fulfilled but it's so much easier. Also bread can be adapted to be approved for a celiac diet.
Pizza Soup Recipe
Serves 6
1 lb. ground beef, or use half beef and half sausage
1 onion, diced
1 bell pepper, diced
1 tsp. salt
1 tsp. pepper
1 tsp. garlic powder
1 tsp. oregano
1/2 tsp. basil
1 cup pepperoni
1/2 cup ham
Sauté meat of choice with onion and peppers. Drain and add seasonings. Use fresh basil if possible. Add several leaves to taste. Once the meat is well browned add in the pepperoni and ham frying for a minute. Then start adding in the soup ingredients.
2 cups pizza sauce
2 cups diced tomatoes
4 cups chicken broth
1 tsp. salt
1 1/2 cups mushrooms
1 cup olives, sliced
Water as needed
Add water to bring the soup to your desired consistency. Taste for additional salt needed. Simmer for 20 minutes. Serve with shredded mozzarella cheese and toasted slices of baguettes.
Serve
mozzarella cheese, shredded & sliced
baguettes, sliced and toasted
Place the baguette slices on a baking sheet. top with a slice of mozzarella cheese and broil until melted. Use the shredded cheese to generously top each serving bowl.
Add any other pizza toppings of your choice to the soup. Some options I like:
pineapple
jalapenos
artichoke hearts
