Looking for an easy one pot meal while you're craving lasagna but don't have the energy or time to execute a layered casserole? Here's your answer! This Lasagna Soup is a one pot dish, easy and family favorite!
Lasagna Soup Recipe
1 lb. ground beef
1/2 onion, shredded
1/2 bell pepper, shredded
2 cloves garlic, minced
1 tsp. parsley flakes
1 tsp. oregano
2 tsp. salt
1/2 tsp. pepper
Sauté onion and bell pepper. Add the beef and fry until browned. Drain the grease if needed then add the spices. Fry a bit longer to get darker crispy bits of beef. Add the rest.
2/3 cup cream, half and half
2 cups diced tomatoes
2 cups crushed tomatoes
2 cups chicken broth
1 1/2 cups corn
2 cups water
5 lasagna noodles, broken into smaller pieces
Simmer on low heat for 20 minutes. Serve with cottage cheese and shredded cheese. And with some garlic bread if you feel extra.
Serves 6-8
Notes
A very simple soup for a chilly day. Especially good for those who claim they don't like soup. this is just lasagna simplified and in a bowl.
